Recently, I’ve noticed unwelcome changes in my body and mind: an uptick in anxiety and more arthritis pain in my hands and knuckles.

My journey with grain-free eating started over 10 years ago when I came across Dr. Perlmutter’s book, “Grain Brain“. At first, I was attracted to the promise of improved cognitive function – better focus, concentration, and memory. However, little did I know that eliminating grains would have wide-ranging effects beyond just mental clarity.
What I realized then, and am reminded of now, is that the “simple carbs” we often indulge in – bread, pasta, rice – do more harm than expanding our waistlines. These foods include short chains of sugar molecules that our bodies rapidly convert to glucose, leading to spikes in blood sugar levels.
This roller coaster ride not only impacts our weight but also affects our overall system, from brain function to joint health.
